What you’ll Need
- 1 x disc/puck/log of fresh goats cheese
- 1 x pack of pre-sliced thin salami
- 1 x Niçoise butter cube
- Tablespoon of Mayonnaise
- Ciabatta bread
- One medium sized fresh tomato
- Salt & Pepper
Method of preparation and cooking
Take your ciabatta bread and cut into the size sandwich you want.
Now cut length ways along the bread, so you have three slices of bread. Then toast the middle slice only in a conventional toaster.
Now butter the insides of the two remaining un-toasted ciabatta with the Nicoise butter cube and you are ready to start assembling the sandwich
Firstly take the bottom slice of butter bread and layer the salami ham along it, making sure each slice over laps…six slices should be absolutely perfect, then thinly slice the tomato layer that on the salami and season well with cracked pepper and coarse ground salt. Now place the already toasted middle slice on top of the tomato and spread the mayonnaise over the exposed side.
Finally slice up the goats cheese and layer evenly along the bread…3 or 4 slices should be adequate and season with more cracked pepper. Then put the top buttered slice on top of it and either cook in a sandwich toaster for 8- 10 minutes or wrap in tin foil and cook in an oven for 15-20 minutes on a gas setting of 200/6.
Last but not least, cut into two and enjoy with a bowl of crisps, side-salad or even a nice bottle of chilled rosé
