What you’ll Need
- 1 frozen cod fillet
- 1 x Asiatique butter cube
- A handful of frozen Sit fry vegetables
- Bottled Lemon juice
- Teaspoon of light or dark Soya sauce
- Salt & Pepper
Method of preparation and cooking
Take a piece of tin foil and place the handful of frozen stir-fry vegetables in the centre, then pour over the Soya sauce, coating evenly, before sprinkling with salt and pepper.
Now take the frozen cod fillet and rub lightly with bottled lemon juice before placing on top of the vegetables, before lightly seasoning with salt, not pepper, as it will turn the cod grey
Now smother the top half of the cod with the Asiatique butter, fold up the sides of the tin foil, to create a sealed parcel and place into a medium pre-heated oven, 150/gas mark 5, and cook for 40 minutes.
Lastly take the parcel out of the oven open carefully…to avoid steam release burning your hands and use an fried egg slice to scoop up and place on a plate.
This dish takes minutes to prepare and is wonderful on its own, as a fish course or part of an Asian inspired meal
Ideal in a ciabatta or for the adventurous one with some serrano ham or some chorizo read more
