What you’ll Need

- 250g pack of seafood medley/mix
- A cup of sieved scone mix flour (works better than normal flour)
- Half a cup of water
- 2 Meunière butter cubes
- 1 whole lemon
- Teaspoon of vegetable oil
- Salt & Pepper


Method of preparation and cooking

Take the sieved scone mix flour, place into a mixing bowl, season with a pinch of salt and pepper and add the half cup of cold water. Then mix until a medium-thick batter has been formed and there are no lumps of flour left. Now add the Meuniere butter, which needs to be placed into a microwave and melted quickly, before adding. Mix thoroughly into the batter, then add the seafood mix and stir in gently into the batter, until evenly coated Next place a frying pan onto a medium-high heat and place a teaspoon of vegetable oil in it. After the oil has warmed up in the pan…two minutes later, use a large tablespoon to place portions of the mix into the pan, to create medium sized fritters…usually about 5 fritters is the maximum at any one time Cook each side of the fritter for 5-6 minutes, or until golden brown and place on to a dish and into a warm oven, so as to keep them hot, while you make more fritters in the frying pan. Normally this mix should yield between 10-20, depending on how big you want the fritters to be. Once all have been made, place onto a plate and garnish with slices/wedges of lemon…works great as appetisers, warm canapés or starters
