What you’ll Need
- 2 x defrosted frozen salmon fillets
- 2 x slices of decrusted brown bread
- Handful of finely grated parmesan
- 2 x Anchois butter cubes
- Salt & Pepper
- Dessert spoon of mayonnaise mixed with a dash of bottled lemon juice (per person)
Method of preparation and cooking
Take the brown bread and grate it through the largest hole on the cheese grater (the one used for cheddar). Once grated, put to one side in a bowl and allow to dry slightly in the air for 15 minutes. Place the breadcrumbs in a bowl with the grated parmesan and anchois butter, then stir all the ingredients thoroughly together. Next place the paste on top of the salmon fillets evenly, put onto a baking tray and grill on a medium to high heat for approx 8-10 minutes, or until the crust is golden brown. Next place the fish onto a plate and accompany with a tablespoon of mayonnaise, which has had a dash of lemon juice added to it. Works well as a starter, fish course or with a simple garnish of mangetout and steamed new potatoes for a delightful main course.
