What you’ll Need
- 2 x tin of plum tomatoes
- 2 x Niçoise butter cubes
- Tablespoon of extra virgin olive oil
- Level teaspoon of sugar
- Salt & Pepper
Method of preparation and cooking
Place the two tins of tomatoes into a blender and blitz until pureed. Then sieve the liquid through a fine sieve, to get rid of any excess seeds and put into a medium sized pan.
Now add the olive oil, teaspoon of sugar (brown preferably), Niçoise butter cubes and generous pinch of salt with a hefty serving of milled black pepper.
Next place the pan onto a medium high flame and allow to cook for 10-15 minutes, or until boiling…making sure you stir it periodically throughout the cooking process
Once it is piping-hot, transfer to a bowl and serve with good crusty bread, this dish works well as a winter warmer, hearty starter, soup course or of course if you fancy a comfort warmer when you feel “under the weather”
