What you’ll Need
- 2 x de-frosted frozen tuna steaks
- Handful of mixed peppercorns (just black will do if necessary)
- 2 x lime
- 400g(approx) frozen mash pellets
- Salt & Pepper
Method of preparation and cooking
Take the peppercorns and place under a clean pan bottom, then roll the pan over the peppercorns..you can use a pestle & mortar, but this is so much quicker and easier
Next, and this is the most important part of the recipe, take the cracked pepper and place in a fine sieve, then shake the corns inside, so that the fine powder (which causes a nasty bitterness) is released and you are left with nothing but the cracked corns
Now take your de-frosted tuna and rub them lightly with the juice of one of the limes, as this will help when adding the cracked pepper
Once the tuna steaks have been evenly coated with the peppercorns, put them to one side and concentrate on the mash
Put the frozen mash pellets with a good dash of salt and pepper and the Niçoise butter cubes into a bowl, cover with cling film and put on defrost for 5 minutes
After the defrost cycle has finished, put the microwave on full heat for one-two minutes, or until even cooked through.
Mix the mash and butter together and simply flash heat it again in the microwave, just before serving
The only thing to do now is simply place the tuna steaks in a hot dry frying pan and sauté on high heat for 3 minutes per side
Finally, chop up the left over lime into two half's place the tuna and mash on the plate and then garnish the fish with the lime cheek
This is a lovely dish that doesn’t actually need further elements added, but if you so wish a simple vegetable accompaniment is fine. such as sweetcorn or peas
