What you’ll Need
- 1 x Kilo pack of frozen whitebait
- 100g of sieved plain white flour
- 1 x teaspoon of paprika
- 2 x Anchois butter cubes
- 1 litre of vegetable oil for deep frying
Method of preparation and cooking
Take the sieved flour and paprika and place into a mixing bowl with a good pinch of salt and pepper, before mixing together
Now add the frozen whitebait to the bowl and fold the flour mix around the fish, until evenly coated.
Place the fish into a sieve and lightly dust off the excess flour
For frying, place the oil in a large pan/deep fat fryer, making sure that it only goes up to half way full with oil….as once the fish is added, it will bubble alot, to begin with, and you do not want oil all over the stove from overfill. Then turn the gas onto a high heat and wait until the oil has reached a hot temperature (approximately ten minutes)
Then carefully put the fish into the deep fat frying basket and place into the oil gently
Fry the fish until gold brown and crispy, between 8-10 minutes, take out of the oil and drain quickly on kitchen towel bore adding to the service plate or bowl
Just before serving, add the Anchois butter on top of the fish and serve with good bread, such as ciabatta ,or side salad as a starter or fish course
